Easily the most exciting new opening in London for 2015, The Sky Garden sits at the top of the impressive Walkie Talkie building, on 20 Fenchurch Street, and houses 1 bar and 2 restaurants. Darwin Brasserie serves an all-day best of British menu in a vibrant, bustling atmosphere.
We are now seeking a talented and enthusiastic Chef de Partie to join our fun and energetic team, so come and be a part of the story rhubarb is writing
Job role
• Reporting and assisting the Sous Chef, you will oversee all aspects of the day to day management of the Seafood bar and grill at level 37 fine dining restaurant and to ensure that the team delivers the rhubarb product in quality, consistency and presentation and also within the financial constraints of the annual budget.
• To ensure that in collaboration with the Kitchen team and under the supervision of the Head Chef that the Seafood bar and grill at level 37 fine dining restaurant runs efficiently and profitably whilst maintaining the reputation and ethos of “rhubarb” food design Limited
• Producing and formatting recipes and methods including the yields and implementing systems where they are followed and documented.
• Management of all for food ordering and stock rotation and weekly/monthly reporting
Candidate profile
• You will have proven track record of achieving and exceeding set operational target and work experience within a similar Fine dining/ retail or fast paced environment
• You will be an excellent team player, lead by example and be able to communicate at all levels and commit to sharing your knowledge and skills within the brigade.
• You should be certified in City and Guilds diplomas in professional cookery or BTEC HND in professional cookery as well as a foundation degree in culinary arts
• HACCP knowledge, Food safety level 3 certificate holder, H and S level 2 certificate holder
• Ability to work long flexible and long hours
