Position: Senior Sous chef (open kitchen)
Operation: Destination Restaurant and Boutique Hotel.
Location: Central London
Salary: £40,000 pa and Benefits
Working Hrs: 50 – 55 hrs over 5 days

Highly creative Michelin star Executive Chef with brigade of 50 chefs; high spec open kitchen with breakfast / brunch, lunch and dinner menus showcasing ingredients-focused cooking (bold, contemporary, healthy and seasonal at 3 AA Rosette level).
Food style: modern European with International accents.
approximately. 400 to 500 plus covers per day (250 for dinner) and exclusive hire and private parties.
Role description
Supporting Executive / Head Chef in all areas of daily kitchen management with brigade of 20 – 22 chefs on service:
Daily kitchen and team management, deputising in Head chef’s absence.
Supervision of large kitchen operation – ensuring quality and standards are maintained on consistent basis.
Menu development (Executive and Head chef collaboration)
Stock management: purchasing, supplier relations, quality / cost control, invoices, stock auditing, maintaining General Practitioner target.
Staffing: recruitment, training and development, rotas, personnel files, etc.
Daily back office paperwork and compliance (i.e. Invoices, rostering, time sheets), EHO relations, kitchen cleaning and maintenance.

Desired attributes
experience at Snr /Sous chef level gained in a comparable, modern ‘Grand Café’ Restaurant, Members Club or Boutique Hotel operation.
Creative with strong, all-round kitchen and people management skill set with ability to motivate and inspire the team accordingly.
Salary and benefits
Start salary package: £40,000 pa (basic and tronc package paid monthly)
Permanent contract subject to standard 3 months probationary period: regular salary reviews (performance dependent); courses as required; 28 days paid annual leave; workplace pension option; group discounts; FAM trips and team excursions; ‘cycle to work’ scheme; laundered uniform and meals on duty.
approximately. 50 – 55 hrs p wk / 7 shifts over 5 days incl. Weekends.
